MUTTONLEG ROAST (RAAN ROAST RECIPE) | 2nd May 2021
I’m again here with my new blog that is MUTTONLEG ROAST (RAAN ROAST RECIPE) | 2nd May 2021 Try this roasted leg of lamb recipe known as MUTTON LEG ROAST (RAAN ROAST) . A whole leg of mutton is marinated in a delicious blend of tasty spices and then roasted for two to three hours until it is tender and succulent. This is a super easy and delicious Mutton Leg Roast (Raan Roast Recipe). The recipe is simple, the trick in making raan roast is the soft melt in the mouth meat. You can try it at any occasion festivals, celebration and even in Ramdan as a dinner. Muslim’s celebrations are incomplete without non-veg food. So without wasting our time let’s start with our ingredients.

INGREDIENTS:-
SPICE MIX:
Red chillies 6-8
Coriander 1 table spoon
Cumin 1 table spoon
Red Chilli Powder 1 table spoon
Garam Masala Powder 1 teas poon
Salt 1 tea spoon
MARINATION:
Mutton leg 1½ kg
Lemon juice 4 table spoons
Ginger paste 1 table spoon
Garlic paste 1 table spoon
Yogurt ½ cup
GRAVY:
Cream ⅓ cup
Chilli garlic sauce 3 table spoons
TEMPERING:
Oil 2 table spoons
Garlic 1 table spoon
Cumin ½ teaspoon
Green Chillies 3
Curry Leaves 12
water ½ cup
GARNISH:
Onion Rings
Lemon Wedges
HOW TO MAKE IT:-
SPICE MIX:
1)Take one medium size pan and roast 6-8 red chilli, 1 table spoon of coriander and 1 table spoon cumin seed for 30 second until a sweet smell appear.
2)after this Add 1 table spoon of red chilli powder, 1 teas poon of Garam Masala Powder (all spice powder) and 1 tea spoon of salt.
3)Give it a stir for 30 sec and transfer it to a mixi jar.Grind the mixture until it becomes fine powder.
4)Seive the mixture powder and grind the remains again one more time. Seive it again. Then throw out the remains.and the Spice Mix is ready.
MARINATE:
1)take one bowl and the mix 4 table spoons of lemon juice, 1 table spoon of ginger, 1 table spoon of garlic, ½ cup of yogurt and add Mix spice and keep it aside.
2)on the other said Wash the mutton leg completely, and leave the leg in colander to dry.Prick the leg all around with the help of fork.
3)Then apply spice mixture completely all over the leg.Cover with fresh wrap and store in fridge over night or 8 to 16 hours.
4)Next day, cook the mutton leg in broad pot or pressure cooker with 2 cups of water. Keep the gas flame on medium to low and cover the pot tightly to seal the steam.
5)The mutton leg will take 1-2 hours of cooking time.Keep checking at intervals of 20 to 30 minutes and adjust heat as required.
GRAVY:
1)When mutton leg is completely cooked. Remove from heat and keep it aside.
2)Mix 3 table spoons of chilli garlic sauce, ⅓ cup of cream and remaining gravy from mutton leg in a bowl and spread all over the mutton leg.
TEMPERING:
1)Take one pan and heat 1 table spoon of oil in it and add 1 table spoon of chopped garlic.
2)When garlic becomes golden add ½ tea spoon cumin, 3 chillies and 12 curry leaves.Let all them sizzle and then pour tempering evenly over mutton leg.
COOK ON GAS FLAME:
1)Heat raan throughly on Gas flame for 7-10 minutes on medium heat and then serve onion slices and lemon wedges.
COOK IN OVEN (OPTIONAL):
1)Preheat oven at 300 F. Transfer raan (mutton leg) with gravy over a baking tray.
2)Add little amount of water if there is no gravy in tray.( The water in tray will stop the gravy from burning.)
3)Bake raan (mutton leg) for 10 minutes until roasted.Serve with lemon wedges, onion rings and chutneys.
