Diwali is a great reason to have friends and family over for snacks and sweets! These Chaklis and Shankarpalis are not just popular snacks during diwali but also work as a great chakna for your card parties!😜
CHAKLI
Ingredients:-
- Chakli flour 500 gm
- white sesame seeds 1 table spoon
- Salt to taste
- Hot Oil 2-3 table spoons
- Oil for greasing + for deep frying
Method:-
- Take chakli flour in a large parat.
- Add white sesame seeds and salt.
- Make a well in the centre and add the hot oil and mix well.
- Add 1/4 cups water in batches and knead into a semi-soft dough.
- Divide the dough into equal portions.
- Grease a chakli press with some oil.
- Put a portion of the dough inside the chakli press till it is 34 filled.
- Cover it with the lid.
- Press out chaklis on to a plastic sheet.
- Heat sufficient oil in a kadai.
- Gently slide in the chaklis a few at a time and deep fry till golden brown and crisp.
- Drain on an absorbent paper.
- Allow the chaklis to cool completely.
- Store in an air tight container and serve as required.
SHANKARPALI
Ingredients:-
- Sugar 1 cup
- Refined flour + for dusting 2 cup
- Oil for deep-frying
- Semolina 1/2 cup
- Ghee 2 table spoons
- Salt to taste
Method:-
- Heat sufficient oil in a kadai.
- To prepare sugar syrup, heat sugar in a non-stick pan.
- Add ½ cup water and cook till sugar melts.
- Take flour onto a plate.
- Add semolina and ghee and mix well.
- Transfer the mixture into an electric whisker.
- Add salt and mix.
- Add sugar syrup gradually and mix till well incorporated.
- Transfer the mixture onto a plate, dust some flour on top and knead into a dough.
- Set aside for 15 minutes.
- Divide the dough into equal portions.
- Dust the worktop with some flour and roll out each portion to make a thin sheet.
- Trim off the edges and cut the sheet into medium size diamonds using a serrated wheel cutter.
- Deep-fry diamonds into hot oil on medium heat till golden and crisp.
- Drain on absorbent paper and cool.
- Store.
