Best Way to Make India’s traditional dessert Kaju Katli | 2022

Kaju Katli:-

Best Way to Make India's traditional dessert Kaju Katli | 2022

Kaju Katli or Kaju Barfi is a traditional Indian dessert recipe that has a smooth texture, nutty flavor, and will literally melt in our mouth.

One of the best Indian desserts to gift in form of a mithai box during special occasions or festivals like Diwali, Holi, Raksha Bandhan, Christmas, Eid.

Ingredients:-

  • Cashew / Kaju                  2 cup
  • Sugar                                    1 cup
  • Water                                  ½ cup
  • Ghee / Butter                  1 tea spoon
  • Cardamom Powder     ¼ tea spoon

Method to Make Kaju Katli:-

  1. firstly, in a mixi take 2 cup cashew and blend to a fine powder.
  2. make sure to pulse and blend else, the cashew will release oil and turns into a paste.
  3. sieve the cashew powder making sure there are no lumps. keep it aside.
  4. Now in a large kadai take 1 cup sugar and ½ cup water.
  5. stir them well and dissolve sugar. boil for 5 minutes or until 1 string consistency is attained.
  6. add in powdered cashew and mix well.
  7. stir continuously until the mixture is well combined and smooth paste is formed.
  8. After this add 1 tea spoon of ghee and ¼ tea spoon of cardamom powder.
  9. Mix them well.
  10. continue to cook until the mixture turns smooth paste and starts to separate pan slightly. do not overcook, as the burfi will turn hard.
  11. transfer the mixture on to the butter paper.
  12. Make sure to grease the butter paper with ghee.
  13. fold the pest using a spatula until the mixture thickens forming a dough.
  14. once the dough is formed, knead slightly, to form a soft dough.
  15. place the cashew dough between butter paper and roll using a rolling pin.
  16. roll slightly thick making sure it’s uniform.
  17. grease with ghee and apply silver paper.
  18. applying silver paper (vark) is optional.
  19. now cut into diamond shape or shape of your choice.
  20. finally, enjoy kaju katli for a month when stored in an airtight container.
